The Very Best Lemon Bars
Ingredients
For the Crust:
- ½ cup cold butter
- 1 cup all-purpose flour
- ¼ cup powdered sugar
For the Lemon Filling:
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- ½ teaspoon baking powder
- 2 eggs, beaten
- Zest of 1 lemon
- Juice of 1 lemon (about 2 tablespoons)
Lemon Glaze:
- ¾ cup powdered sugar
- 2 tablespoons fresh lemon juice (or enough to reach a smooth, drizzleable consistency)
Instructions
Make the Crust
- Preheat the oven to 350°F.
- Cut together the cold butter, 1 cup flour, and ¼ cup powdered sugar until the mixture resembles coarse crumbs.
- Press evenly into an 8×8-inch baking pan.
- Bake for 15 minutes.
Make the Filling
- In a bowl, whisk together the granulated sugar, 2 tablespoons flour, and baking powder.
- Stir in the beaten eggs, lemon zest, and lemon juice until well combined.
- Pour the filling over the hot, baked crust.
- Return to the oven and bake for 20–25 minutes, or until the filling is set and the edges are lightly golden.
Make the Glaze
- Whisk together the powdered sugar and lemon juice until smooth.
- Add a little more lemon juice if needed to create a thin, drizzleable glaze.
- Drizzle over the warm lemon bars.
Serving Tips
- Allow the bars to cool completely before slicing for the cleanest cuts.
- Store covered in the refrigerator for up to 5 days. Note: These lemon bars also freeze beautifully. Simply wrap the bars in plastic wrap, and then store in an airtight freezer bag or container. If you cut and individually wrap the bars as smaller squares first, you can enjoy a small treat when the sweet tooth hits!
- Once completely cooled, garnish with a little fresh lemon zest or dusting of powdered sugar before serving.
